Shauna: "Fiesta time"

Well hello there. I'm Shauna, the youngest of the sisters. My little family and I (which include my babe of a husband, two adorable boys and an affectionate feline) reside in beautiful Colorado. I'm thrilled to start this blog with my lovely and talented sisters; they've always been an important example in my life, and I'm grateful for the opportunity to create and craft with them. With that said, let the blogging begin!

I love a good party, and I LOVE good Mexican food. Cinco De Mayo is the perfect excuse to combine both.

Sergio Mendes & Brazil '66 are ideal music for any party...even if though they're Brazilian, not Mexican. Check them out on Spotify. We raided the local Goodwill and found a terracotta taco stand, made a mini fiesta garland, turned a dollar store El Pato salsa can into a vase/utilities holder and called it done. The sombrero added a nice touch as well (also from the Dollar Tree)! But lets get to the food.

Chips with Salsa and Guacamole
Chicken Taquitos
Blacken Chicken Salad

Blacken Chicken Salad is a tasty salad my husband Dave thought up a couple of years ago. We love this salad and eat it often.




Blacken Chicken Salad

2 Tbs paprika
1/2 tsp onion powder
1/2 tsp chili powder
1 tsp minced garlic
2 Romaine hearts
3 chicken breast (or 6 tenderloins)
1 tbs olive oil
1/2 cup corn
1/2 black beans
2 tsp lime juice
1/2 cup shredded cheddar cheese
Tortilla strips

1. Heat olive oil in a large skillet and brown garlic till fragrant
2. Mix paprika, onion powder and chili powder in a shallow dish.  Cover both sides of chicken in spices.
3. Place chicken in hot pan and cover.  Let fry till black, then flip. While chicken is cooking, chop Romaine. Once both sides are blackened, remove from pan and cut the chicken into strips or chunks, and place in the salad.
4. Before cleaning the pan, place the corn, beans,  minced garlic, and lime juice in skillet and fry for five minutes, letting the vegetables mix with the leftover bits.  Top salad with cooked corn and beans, salsa, cheese, and tortilla strips.

*for salad dressing we like ranch.
